Somebody pinch us! Just when you thought Mermaid couldn’t get any cooler – a familiar fixture on the eats scene is set swapping the gouda for gin, with Cheese Me Baby, now moonlighting as a late night sips spot. Bar Pincho is the new alias signifying CMB’s weekly transformation into libation haven, assuming its thirst quenching, after-dark persona come Thursday through Saturday every week.
We can neither confirm nor deny if the new piggy-back venture is technically classified as a collab, a crossover – or just a next-level case of ‘mi casa, su casa’, but when it allows us the opportunity to swan into the weekend with an extended sesh of tunes and moonlit sips at a local fave, do we really mind?
Cheese Me Baby’s Mermaid eatery has been a stalwart fave on the Gold Coast Highway stretch since they first called shotgun on the location back in 2021. Churning out much gouda-ness and one of the best coffees in town they have amassed a loyal following. Tucked just off the Tamborine Street crossroad, the CMB crew put the formerly unutilised corner on the map, cementing its status as certified hotspot.
Throughout summer the chillaxed sando spot is now tag teaming with Bar Pincho from 4pm Thursday – Saturday, switching out the tasty, cheese-laden toasties for wines, shaken cocktails and share-style tapas as the sun sinks low.
Bar Pincho owners Chelsea Clarke and Joseph Greene have quite the recipe for success with twenty years of hospitality experience between them. Bar Pincho is like teleporting to a Basque Country pinxto bar. It’s dimly lit, boasts a hand-picked wine list, and, just like its daytime alter ego, is the ultimate spot for kicking back, having a chat with the locals, and sipping on killer coffee fine vino.
Though the laid-back, beer garden-vibing space may be but a humble shipping container at its core, the small but mighty location packs more cool-points in its pincho finger than many of us put together As day becomes night, bask in the warm glow of festoon lights and acquaint yourself with the curated wine list– partake in a Gilda Martini and for a little extra pep in your step, the Capricorn coffee rum based Cafemocho.
Feeling peckish? Sidle up to the curated array of shared plates and small bites – including, true to the venue’s roots, a considered selection of Cheeses such as Manchego, Riverine Blue and Savarin to appease the hardcore fromage fans. And whatever you do, don’t miss their house-marinated Boquerones!
If you’re in the mood for something slightly more substantial, the likes of the toasted-to-perfection Ciabatta topped with Confit tomato, sardine, goats feta and chives dishes up your daily omega fix in the most delicious of ways.
We don’t know about you guys, but the option to linger a little longer with sunset sips and good vibes aplenty at Cheese Me Baby’s ‘Up Late’ alias, Bar Pincho, sure does feel a lot like one of those whacky and wonderful cheese-fuelled dreams just came true.
And mark your calendars, because starting in the first week of December, Bar Pincho is introducing Sunday Sunset afternoons from 3pm, complete with live music.
